Pesto Salmon

1.  Mix all the ingredients together and spread thickly on top of the salmon.

2. Melt a little oil & butter in a frying pan over a medium heat and fry the salmon, sauce side up ! with the lid on for ten minutes.

Hey Pesto ! & serve with new potatoes and peas - a hit every time.

Ingredients:

4 x 170g / 6oz. Salmon fillets / darnes - skinned & boned

2 oz. Mayonnaise

2 tbsp. Parsley - chopped

1 tbsp. Pesto
