Cod with a herby crust topping

  1. Preheat oven to 200*C/fan180*C/ gas 6.  Line a baking tray with foil and lightly grease.
  2. Pulse the bread in a food processor to rough crumbs, add the herbs, cheese, lemon zest, egg white and season well. Pulse until just combined.
  3. Place cod onto baking tray and brush the tops with a little olive oil and spread the crumb mixture on top.
  4. Bake for 10 - 12 minutes until the fish is cooked through ( opaque ) and the topping is golden.
  5. Remove from the oven, cover loosely with foil and rest for five minutes... the fish that is - not you!
  6. Serve with peas and new potatoes - Eazy & Tasty

Ingredients:

  • 4 x 175g skinless fresh Cod fillets
  • 4 x bread slices, slightly stale & crust removed
  • 2 tbsp chopped fresh basil
  • 2 tbsp chopped fresh thyme
  • 2 tbsp grated Paresan
  • Grated zest of half a lemon
  • 1 large egg - white only, lightly beaten
